Easy Homemade Oreo Cookies and Cream Cake…..
I am sure that you noticed a nosy face there in my pictures. That is my oldest who loves anything moving in the kitchen that has been heated up, stirred, or baked! He is always hungry, and definitely loves home cooked meals. I would have to give all that credit to his Mimi (grandmother), she gave him this one passion for knowing, and loving good food. Growing up into a cooking family has been a legacy for me, but even more so something that I could pass down to my boys. My brother and dad are such amazing cooks, and we owe so much to my mom for her effortless teaching ability.
I’m sorry that my cake had an earthquake crack in it. My husband says that I am so self conscious about the way it looks, when they are more focused on taste! (ha ha ha) Men, OMG!!
Every other random Saturday I will experiment with different dishes, or desserts. The one thing is that my brood of boys love that they get to taste test this stuff. I had made an Oreo Cake once before for Jerral’s birthday. For some odd reason this one came out so much better, and yummier! I tweaked a few things, and I was in cake heaven people!!!
I mean look at that golden goodness, this cake literally slid out of my pan! There are two things that make me a nervous baker. First, it’s not getting the cake out of the pan properly. Secondly, the icing turns out terrible. I have just perfected the ART of making really good icing this past year or so. I’m telling you I am NOT an expert, just a momma, and tired school teacher.
Recipe As Follows
2 boxes of White Cake Mix (I told you very easy recipe)
2/4 Cup vegetable oil
1 cup unsweetened Apple Sauce
1 package of Oreo-Thins (preferably the thins)
3/4 Cup Water
2 blocks of regular cream cheese (softened)
3 Cups of Powdered Sugar (You may need more just watch it, icing needs to have little firmness to it)
1 TBSP vanilla
1 stick of softened butter
1/4 Cup milk
Side Note: This was going to be a 3 layer cake, but my last layer didn’t want to cooperate, because this cake was so moist.
In your bowl dump all ingredients in. You don’t have to be super specific of order, just making a very simple box cake mix jazzed up! I had non-stick pans, but I greased them down, and floured them so that I had the extra protection of them not sticking to the pans. Once I was done beating the batter, pouring it into my pans. I took my oreo thins, and put 6 cookies into the batter, spreading them out, into each pan. I didn’t want to crush them into my batter, had done that on the first cake, and didn’t like the outcome. 🙁 Please cook this until golden brown, and or knife, or toothpick comes out clean.
In your mixer, mix the 2 block of softened cream cheese
1 TBSP of Vanilla
3 cups of powdered sugar
1 stick of softened butter
1/4 Cup milk (Drizzle milk in as you see how thick its getting, go slowly)
