This is a fun, my version of rasta pasta! Remember don’t come for me, because I didn’t send for you!! I chose to use shrimp, no scotch bonnet peppers, and no jerk seasoning. Oh well, this is my cute version of rasta pasta.
Rasta Pasta with Shrimp
This is an abbreviated version of Rasta Pasta, and it is so good with so many yummy veggies.
- 1 whole onion (chopped)
- 1 whole red bell pepper
- 1 whole green bell pepper
- 2 cloves garlic (minced)
- 2 cups heavy cream
- 3 cups pasta noodles of choice
- 2 cups small deveined, and peeled shrimp
- 1 cup of jalapeno cheese (shredded)
- 1 tbsp salt in boiling water
- 1 tbsp olive oil (in boiling water)
- 1 tsp paprika
- 1 tsp salt
- 1 tsp pepper
Season shrimp the way you like. Cook in a large skillet over medium-high heat for about 7 minutes. Stirring every few minutes. Remove and set aside.
Bring about 5 quarts of water to a boil in a large pot, salt the water and add the penne. Cook for 8 minutes until al dente drain and set aside.
In the same skillet you cooked the shrimp in heat 2 tbsp of olive oil over medium heat and add in the onions and peppers. Season the onion and peppers with salt, pepper, paprika, and garlic powder. Stir occasionally until tender, about 5 minutes.
Add the coconut milk, or heavy cream. Bring to a boil and let simmer on medium-low for 5 minutes. Stir and gradually add in the cheese. Let simmer for another 5 minutes.
Add the chicken or shrimp and penne into the skillet, stir to incorporate. Then you’re done!
Enjoy!
I don’t want you to buy extra spices you might not use often, we are trying to save money here, so don’t buy dry jerk seasoning if you don’t already have it. Instead to season the chicken or shrimp you can use salt, pepper, garlic powder, or all-purpose seasoning. You can add some cayenne pepper for extra heat if you’d like.
The cream of coconut is just something I know people like to add to cut the spice in this dish but again you don’t have to add it because I only use a small amount and you’ll basically have a lot left over unless you use it for something else. Cream of coconut is great for making pina coladas. This dish is usually made with penne but if you want to use another pasta you can as well.
If you are cleaning your chicken make sure to do it safely so rinse in a bowl and drain in the sink. Wipe down the sink with disinfectant afterward.
I hope you enjoy!
