Homemade Blueberry Waffles………
This morning I woke up , and decided that I had everything on hand to make fresh, blueberry waffles for my guys. Normally they wouldn’t care what I fed them, but I wanted something super fresh! When I was growing up my Dad would make us pancakes from scratch every Sunday, and that was a “BIG” treat in our house before church. He never made them from a box or frozen. He also had this amazing griddle pan that would make the prettiest, and fluffiest pancakes around. These pancakes were special to my siblings and I, and had a strong tradition in our house.
I still love pancakes, but waffles tend to have more of a special place in my heart. That is why I am a lover of a waffle maker, and have owned my own for years.
My boys are a little fickle when it comes to fresh fruit mixed in with items, of such but these waffles are a true winner in our house. They are pretty excited especially when I break out the “EXTRA CREAMY” whipped topping for frills. I don’t normally let them have whipped topping on waffles, but this was a fun Sunday treat. I can be that mom that tries to limit their sugar intake, and for the most part eat pretty healthy!
We like to double the recipe then freeze them for a later date. Then we can eat them all week just by popping in the toaster oven. It really does make me happy to feed the boys a well balanced, healthy breakfast. My youngest 2 boys are pretty high maintenance breakfast eaters along with their dad.
Homemade Blueberry Waffle Recipe……
Refrigerated
2 Eggs, Large
Baking & Spices
2 cups All-purpose flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
2 tbsp Sugar
1 tsp Vanilla Extract
Dairy
1/2 cup Butter
1 3/4 cups Whole Milk
Instructions:
- In a large bowl mix flour, sugar, baking powder, baking soda and salt.
- Make a well in the flour mixture and add in milk, butter, vanilla and eggs. Stir all ingredients together until smooth.
- Follow instructions of waffle makers to cook waffles.
Notes:
Freeze an extra waffles to toast desired amount of waffles from frozen. Top waffles with fresh fruit, whip cream, maple syrup, confectioner’s sugar or cinnamon. Serve as a dessert topped with ice cream and caramel or hot fudge.
You can top your waffles with anything you prefer. We are a family of fruit eaters, so these are what was on hand and super sweet this time of year.
