Homemade Strawberry Pie….
This was the most delicious strawberry pie, we were so excited about this dessert. I had been strawberry picking to this cute place HERE, and I had so much fun! My team and I took the 3rd graders here on field trip, and this was our first trip here. As the buses pulled up the staff greeted us at the gate, and off we went for the day. I truly enjoyed this day, and I am so happy that we chose this place for enjoyment. The kids ran wildly all about, and US teachers took our own field trip into the fruit picking, and sitting by the lake.
My sweet friend Michelle, and I decided to start with the strawberry picking, and we just had the best conversations going through all those rows. Some of the sweetest conversations can happen when you like working. We walked and walked, we just took our time and enjoyed the breezes while the children played their hearts out!
Start With Fresh Strawberries…….
This pie made me smile the entire time that I was beginning to prep it. I love strawberries, but even I have to eat them sparingly. I suffer from re flux, and strawberries are TOP contenders for acidity. I haven’t just gave up on them all the way, but I monitor how much I eat of them. I learned so much while we were picking, and the stem, and preserving them for future strawberries. The people at the farm told us to cut two inches above the stem, to keep the fruit intact for future fruit.
RECIPE
3 cups of fresh cut strawberries (washed and cut into smaller pieces)
1 store bought pie crust (or homemade your preference)
1 package of 3 oz strawberry jello mix
2 tbsp Cornstarch
3/4 cups Granulated Sugar
1 Cup Water
Side Note: I tend to just cut the ends of the strawberry heads off of my little guys, and or you can HULL them with this method. This is safe and easy, and I am sure the kids would love to help!!
The Glaze……
Stir together the dry sugar with the cornstarch until well combined.
Add the water and cook over medium heat until thickened, stirring constantly.
Stir in dry jello and whisk constantly until smooth.
Pour over hulled, fresh strawberries and stir gently to coat. Use to make a fresh strawberry pie or other strawberry topped dessert.
Stir together the dry sugar with the cornstarch until well combined…
Give this pie crust time to be able to cook completely, so that this is done when your glaze is done. This was a very wholesome American pie, that my family just loved it all the way around. I am sure that we will be making this one again sometime soon this Spring, and Summer. I poured the strawberries into this bowl, and once my glaze was cool enough. I poured the glaze onto the strawberries, and then into that golden crust.
