Easy, Quick, Fresh Summer Bowls…..
Lately, I had been waking up, walking, and jogging with Jerral. The boys had recently joined our new outside ventures. It is always a nice thing when you can get your kids involved in their health too. It had me thinking about dinner options, and what could I fix that would be quick, light, and healthy. I am the mom that will give you a few breakfast choices, but NO dinner choices. This bowl had to be something that could match with their needs, and meal expectations ha ha ha!! I think that most kids come running down the stairs in some type of excitement, for what will be to come for dinner that night.
My oldest Caleb usually can peg what’s for dinner based on smell. This time I had him help me prepare it, verses offering up his olfactory senses!!
Choosing Your Bowl Contents……
The boys know that the brighter colored the food is, then it must be very good for me to eat! I have always tried to teach the boys, anything bright, fun, colorful and fresh smelling is God’s vitamins for your body. The only thing that I didn’t place in the bowls that you see in the photos is the sweet potatoes. The sweet potatoes were going to be cooked on the side, but my tummy was ready NOW, not later. (I cook my sweet potatoes in the oven to maximize sweetness)..
Steps To Bowl Glory….
Everything else seen here on the counter is used in the creation of these summer bowls. I love fresh, bright, and yummy goodness when I am cooking for my family. They deserve that at the least, and God’s vitamins are the best!
Caleb has been cutting up onions a lot for me lately. Normally red onions aren’t on my grocery list unless I need to pack a lot of punch in a dish. He tells me, “These things are so strong smelling”! As Caleb is cutting these up I am seasoning my chicken breasts, which are thin breasts to cook on a shorter period of time.
Once I am done seasoning the chicken , I make sure that I have a screaming hot cast iron skillet ready for these two breasts. There are only two because two of the people here don’t eat shrimp. The rest of the clan will eat shrimp though.
Once the chicken is done cooking here on the stove, I can take this pan and go directly to the oven for about 15 minutes, and using the same pan, with the same yummy bits on the bottom of the pan to make some very yummy shrimp.
Shrimp….
When transitioning from chicken to shrimp please make sure that you are hand washing, and staying safe between meats. This is a practice I STRESS a lot to my boys when food handling anything.
Caleb is chopping fresh jalapenos for a little heat, and we love the spice. I make sure to tell Caleb NOT to rub his eyes while working with these little spicy things. He makes sure to wash his hands thoroughly before moving on to something else.
I used these beautiful bowls here found at Target and Home Goods . I am a sucker for pretty bowls, and love any pattern.
Here, you see my son Caleb putting the corn in the microwave for 4 minutes, it will completely remove all shuck and hair in two or three swipes. I love the easiness of being able to move from one thing to the other fast.
You see how easy that corn hairs were removed. All you have to do is put corn in microwave for 4 minutes, let cool some and then remove shuck and hairs. Voila!!!! Then start cutting the corn off the stocks like this…
Everything is getting chopped, and placed into bowls strategically. I love how fresh this dish is, and yummy tasting too! I loved squeezing fresh lime all over it, in the end.
Ingredients Needed For Recipe
Meats: Shrimp, Chicken, Sausage, or Fish (Your Choice)
Veggies: Avocados, Corn, Tomatoes, Lettuce, Red Onions, Lettuce, Limes etc.. (your favorites)
Olive Oil: To saute meats
Butter: Tablespoon for Shrimp
Jalapenos for Spice
Zatarains (To taste , be easy can get salty) 1 tsp
Garlic Powder (lightly) 1 tsp
Cook Meats to Your standard… I cook my chicken until it has these little burnt, crispy bits on them. Cook My shrimp til pink, and dab butter at the end of cooking for maximum taste!
