The Easiest, Yummiest, (BBQ) Chicken Cobb Salad……
Happy Hump Day friends…. now you guys know that I am a fan of fresh veggies, and anything that has do with avocado. If you didn’t catch my last recipe post with those amaze balls fish tacos HERE. If it is light bright and yummy, you got me hook, line and sinker. My boys are game for anything that has a boiled egg, and bacon to be apart of this concoction. Jerral and I have been trying to gravitate towards more exercise lately meaning bike rides after work.

Speaking Encouragement In Your Life…….
I cry through the miles, but he is the best encouragement EVER! I have to say this and maybe I am totally off my kilter here, but he has been the most amazing force that has hit my life! Never get it twisted that this #teacherlife can be stressful, or cause some type of distress. US teachers work so hard on behalf of our students, and at times it’s difficult too not get emotionally attached. I am so excited to show my steps to this amazing version of this Cobb Salad. Make sure to start with fresh everything, I just feel so much better when I eat it. I find that my tummy is in order, and it even helps my mood. I love fresh lemons, limes, and avocados.
This recipe also called for fresh corn on the cob, boiled eggs, and some very yummy dressing too! There is a trick that this man taught my hubby and I when it comes to taking the husk off of the corn. If you take the corn, and stick them in the microwave for 4:00 minutes. When they are done in the microwave, like magic the husk will peel back even with all the corn hair too!! (Voila)!!!!
Learned Corn Trick……..
Once we figured out the corn trick, take a look at how easily those hairs pull away from that corn. I am a sucker for saving me any time in the kitchen nowadays. Then I make a quick transfer to the grill pan, and grill my corn to perfection. I use any type of EVOO (Extra Virgin Olive Oil), it will be great all the same.
Once the grilling session is done, I take the corn and cut it away from the cobb. This will be thrown into my salad, and it will so yummy. Next, I get to cutting up all my veggies, and get things moving faster on my part. I have hungry boys circling me in the kitchen at this point.
This salad would not come together if I didn’t put in the shows stopper, and all its glory. I simply grilled my chicken on my stove top grill pan, and topped with my favorite BBQ sauce. Once I am done grilling place in oven for at least 30 minutes on 375. This chicken came out so tender too!
Isn’t this the cutest dish towel ever? I am an official dishtowel hoarder, and I am not ashamed to admit that!
