Mini Stuffed Sweet Peppers, So Easy and Good……
Oh, goodness me!!! Happy Hump Day friends.. When I organize my life, I am one productive chick ya’ll!! I wanted to share the most easiest recipe with you that my boys, and hubby absolutely love. This is an easy recipe and takes a little tiny bit off effort to do. I have been trying to meal plan more lately, because it gives me a leg up on the week. It also helps me grocery shop for the week, and takes out all of the guess work too. This will be the sweetest recipe you ever did like…
Start with these mini sweet peppers, and run with them to the finish line. These peppers actually come in a bag, or clear container. They are red, orange, and yellow all good! Also, when I meal plan I am trying to cut out as many carbs as I can for the entire week.
Washing and Gutiing The Mini Stuffed Sweet Peppers….
Always make sure that you wash and cut the heads off of the peppers. When I say heads I mean the stems, and then slice them in half to remove all the flesh, and seeds. It makes it so much easier to stuff the peppers, and get the prepared for the oven.
Now I am preparing the peppers to get stuffed with a taco mixture that I make. The mixture is ground turkey, a taco seasoning pack, and a block of cream cheese. Make sure to let the cream cheese get softened, and meat to be room temp to mix the two together. This makes the yummiest mixture, and I have to stop Caleb from eating the mixture before I can stuff the peppers.
Mini Sweet Peppers Stuffing Choice…
You can also use any other type of ground meat that you would like such as..
Ground Chicken
Ground Beef
Ground Pork
Ground Turkey
All of these combinations will work, and taste great too!
The last step before the oven, and boy they look good too!
Recipe Instructions
Cook meat as desired. In this recipe I use one packet of TACO BELL seasoning mix.
Cut peppers, gut them, and wash them again.
Once your meat is cooled, mix with a stick of cream cheese (softened).
Prepare to stuff peppers, with a spoon.
Sprinkle your favorite cheese, on top any kind.
Cook in oven heated to 350 degrees. I cook for atleast 30 minutes to make sure my peppers are soft, and not too crunchy.
Let cool, and serve. (You can also use jalapeno peppers too) My boys love kick!!! LOL
