Easy Strawberry Valentine Sheet Cake is probably one of those recipes that you can do with your eyes closed. This was one of the easiest recipes to throw together for the beautiful sake of Valentine’s Day! Everything is homemade even the PINK buttercream frosting that you see on top. I wanted to jazz this cake up a little bit more by adding those pink sugar crystals on top.
I mean there wasn’t any disappointment in this little cake right here. It literally took me no time to come together. My husband the “cookie monster”, well maybe just say the sweets monster. He just loves cake, and cookies what can we say? LOL
Signature Strawberry Sheet Cake Ingredients…
Strawberry Valentine Sheet Cake
This is a simple Valentine strawberry sheet cake recipe that anyone can pull together quickly!
- 2 cups all purpose flour
- 3/4 c cake flour
- 2 tsp. baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup vegetable oil
- 1 1/2 cup sugar
- 4 large eggs
- 1 1/2 cup strawberry preserves (fresh or from the jar)
- 1 tsp vanilla extract
Strawberry Cream Cheese Frosting
- 1 block cream cheese (softened)
- 4-5 cups powdered sugar
- 1/2 cup butter (softened)
- 1 tsp strawberry extract
- 1-2 drops food coloring pink
Preheat your oven to 350F and grease and line a 9×13 baking pan with parchment paper. If you plan on serving the cake within the pan, omit the parchment paper. If you want to take the cake out of the pan, place a strip of parchment paper along the length of the pan, letting it hanging over both sides. Or, you can do this the old fashioned way like I did, grease and flour the pan.
I used strawberry preserves, it is faster, and easier for me. If you would like to use fresh strawberries get into that as your wildest dream. Just use a blender, or a food processor. We don’t want it completely smooth as you still want some strawberry bits throughout the cake.
For the cake, whisk together the all-purpose flour, cake flour, baking powder, baking soda, and salt in a bowl and set aside.
In a large bowl, whisk together the oil, sugar, eggs, strawberry preserves and vanilla extract.
Stir in the dry ingredients just until the batter comes together. You can also use a stand mixer.
Pour it into your prepared pan and spread it even. Bake for 35-40 minutes or until a toothpick in the center comes out clean with a few moist crumbs.
Let the cake cool completely in the pan before frosting. If you would like to lift the cake out of the pan, refrigerated it for at least an hour before doing so.
Strawberry Cream Cheese Frosting
Take your block of softened cream cheese, and put it in the mixer, or use a hand mixer.
Take the softened butter and place in a hand mixer.
Add in 1 tsp. strawberry extract
4-5 cups powdered sugar. (Watch consistency)
Add in 2 drops of pink magenta food color, or just pink.

I found that this cake was very unfussy, and didn’t need a lot of my attention. It was very easy to throw together, and the frosting was even better than I expected.
