Quick, and Easy Week Night Meal……
Hey Friends!!! This is a quick, easy recipe that anybody can do. Before I get into this recipe I want to say that the giveaway (CLOSED) of the E-Design and beauty bag has been chosen. I am actually very excited to be working with this client on the E-Design of her master bedroom. She wants to turn that space into a light, bright, and dreamy spot for her and her hubby. Ok, back to my delicious dish that I whipped up for my big eating family!
I have actually made this dish before with my teenager on the grill outside, and the difference is there is no shrimp in this recipe. If you would like to see how I made the summer treat last summer you can find it HERE.
This is my theory on vegetables, and produce at its best. I am BIG on fresh vegetables, and what they can do for your mind and body. I am certainly aware that everyone that reads this may NOT like fresh veggies. There are some guidelines that I do go by when cooking a wide variety for my crew.

My personal opinion is that the brighter colored that your veggies are for you, the better they make you feel. I have always loved eating veggies. The only type of vegetables that I don’t like is BEETS (yuck)!!! Ok, that is out in the open, and we can move on. As, you can see that doesn’t leave out too many others which is okay with me. I use what my family enjoys, and everything seen here is loved by many. When preparing this recipe please use the things that will make you happy when opening the foil in the end.
I give all my veggies a rough chop, and I am NOT trying to be fancy or anything. These vegetables will be tossed around in foil, with olive oil and butter. I didn’t pre-measure anything out first, or do anything special. I just bought my veggies and started chopping. The old recipe that I listed above, I used old bay seasoning to do the seafood boil packets.
Any type of meat will do, but please make sure that it is the type that can cook very quickly. I don’t like to use meats that will end up being too tough to chew, or take too long to cook. The other items in your foil will cook within a 45 minute oven stay, so don’t choose meat that needs too long.
Variations To This Recipe
Asparagus
Corn
Sausage
Crab meat, or Crab legs
Potatoes (any kind)
Peppers (any kind)
Cauliflower
Broccoli
Brussel Sprouts
Sweet Potatoes (yummy)
Green Beans (fresh is better)
Spinach
Tomatoes
This can be your foil of perfection….
Cooking Instructions….
Once you have everything chopped, then make sure that you place on 2 sheets of foil paper. This will protect your oven, and also keep the juices in to steam the food.
I put my oven on 325 degrees, and wrap my foil tightly.
Cook for at least 50 minutes.
Be Careful it is very HOT when you start opening the foil…
Don’t forget to drizzle a little olive oil, and butter on it before sealing it shut to cook.
Don’t Overthink This Meal….
This is too easy to be overdone, and I enjoy how easy this is for my crew!! There was some potatoes, sausage, and peppers left over. So in morning we are having those yummies with eggs, and tortillas. I hope that you get a chance to try my easy recipe, and please come back to tell me about it.
