Who doesn’t love Fast, Easy, Butterscotch Bites?? My family was all over this dessert, from the moment I pulled out the ingredients to whip up a batch of these yummy little guys. Ever since I was a little girl cooking has been the heart of my family, and it creates the love and warmth around the table that I always had growing up. I believe in eating at the dinner table, having those meaningful conversations with my children, making sure that I am in the know as far as their lives are concerned. Mr. JW and I both being school teachers we are fueled by different causes, but raising these four boys have always been one of the biggest concerns of our affairs. Being a mom to my sons, and loving them through this BIG BAD world, teaching them how to cook, how to fold their own clothes, be dutiful, and not just a FIXTURE was very important to my hubby and I. I am so sorry that I jumped on my life story for a minute, but time does not stop for anyone so these words and moments are very meaningful to me always.
My mother was the epitome of Southern cooking, and could feed a whole block on one pot of food whether it being gumbo, okra, red beans, cornbread, etc. She was my family’s matriarch and the neighborhood’s soup kitchen for hard times on anybody who felt what being at the end of a pay period could be like trying to make it. She put into me the foundation for my family, the value of a dollar, the emotion behind what I cook, and the belief that love surrounds a kitchen table with anyone no matter who takes part in it. I want my children to know that we help each other, we lend a hand to others, we give back, we hug, we kiss, we cry, we embrace all trials and tribulations with a brave face, but mostly we do it with each other.
My mother placed into me her legacy, and through her legacy I make sure that she stays alive in myself so that my boys can continue to see her. She will always be my girl, no matter whether through spirit or in my dreams. She lives in me, and I want to always make her proud of my steps.
You can put the graham crackers into a big ziploc, and use rolling pin t crush them like dust. I rather they are crushed very fine, so that my bites (balls) that I m going to roll don’t have any big chunks to bite into, or they roll very nicely.
PLEASE NOTE: Do not crush the pecans to dust, just roll the pin enough to chop them up. Remember these are Fast, Easy, Butterscotch Bites…..
I used one big handful, please follow the recipe if you do not want that much coconut in your recipe.
Fast, Easy, Butterscotch Bites…..
Start to end: 40 minutes
Level: Easy
Prep: 10 minutes
Cook: 12-15 minutes
Inactive: 10 minutes (cooling enough so you can roll balls without getting burned)
Recipe as Follows: (Fast, Easy, Butterscotch Bites…..)
cooking spray for coating the baking pan.
6 oz. Butterscotch chips
2/3c. sweetened shredded coconut
Kosher salt BIG (pinch only)
2/3 c. of chopped pecans (any nut works)
1 14oz. can of sweetened condense milk
1 2/3 cup graham crackers
Confectioners sugar, for rolling only
Heat oven to 350. (You will only keep in oven for about 15 minutes)
You will let cool for about ten minutes (inactive), then long enough for you to be able to handle rolling warm balls.
You can use varying amount of graham crackers due to how much you are trying to make for your house. My house is full of boys so I always use the larger amount of the recipe. Please gather all of your recipe items together because this is a rather easy recipe to follow, and it will become a bowl dump at the end.
Roll the balls while warm into sugar, then place on platter..Enjoy!!!!!
